Pancakes

Ingredients
120g plain flour
2eggs
210ml of milk
1tablespoon of melted butter
or sunflower oil
oil for cooking

METHOD
Sift the flour into a large mixing bowl.

Add the salt and give it a mix before making a well in the middle.

Break two eggs in the well and pour in roughly a quarter of the milk.

Gently whisk everything together and slowly add the rest of the milk until it’s all used up and the mixture is smooth.

Put a small amount of oil in the bottom of a frying pan-just enough to coat the bottom of the pan- and heat it.

Put a small amount of the mixture into the pan – enough to cover the base- and allow to cook for one minute.

Shake the pan to make sure that the pancake slides and doesn’t stick.

Toss the pancake and allow the other side to cook.

Add some lemon to your pancakes, or as and alternative you could add some bananas or strawberries.

For savoury pancakes you could add some cheese, ham or mushrooms, whatever takes your fancy!
