Aubergine Melanzane

Ingredients
1 aubergine, sliced
2 tins chopped or plum tomatoes
grated mozzarella cheese
salt and pepper

You can use one large ovenproof dish or smaller individual dishes for this recipe

Method Heat the oven to 200°C. Place slices of aubergine on the bottom of you dish until it is covered.

Now cover the aubergine slices with the tomatoes. Season with salt and pepper and place a sprinkling of the cheese over the tomatoes (not too much!)

Now cover this layer of tomatoes with another layer of aubergine.

Add a final layer of tomatoes and season again with salt and pepper. Now cover the top with mozzarella cheese.

Cover with tin foil and place in the over for about 1 ½ hours – removing the foil for the final 15 minutes to brown the top of the cheese.

Remove from oven and serve – just be careful not to burn your mouth!
